This pot roast recipe will have you coming back for seconds, and maybe even thirds!
My husband loves the hearty and savory mix of the roast and carrots!
This recipe is pretty simple, but the earlier you prep the better your roast will taste. You can choose to marinate the roast overnight or for a couple of hours. With this recipe I marinated my roast for 5 hours, from 7 am to 12pm.
First I set up all my ingredients:
Worcestershire sauce
Roast ( Beef shoulder is what I picked due to its size )
Baby carrots
Yellow potatoes
Extra virgin olive oil
Minced Garlic
Onion ( I chose white onion)
Seasonings: Tony Chacere’s , Onion powder, Coarse black pepper, and Garlic Powder
I washed off my roast and drenched meat in Worcestershire sauce. I also cut up onions, and added garlic, seasonings, and olive oil to the pot. I poked holes in the roast to help to tenderize the roast.
Let sit in fridge for a few hours to marinate or you can go on to the next step. Add potatoes and baby carrots to pot. Add enough water to pot to cover majority of the roast, carrots, and potatoes.
Set Instant Pot to Pressure Cook and set time for 3 hours. If you like checking up on your food during the process, set your Instant Pot to 1 hour to check on your food and then reset again for another hour to check again. Voila! After cooking your roast for three hours you will have a tender, hearty and delicious meal you family can eat for days !
Side Note: You can then use the remaining broth for an addition to another meal such as pouring the left over broth over a plate of macaroni and cheese.

- Pot Roast
- 1/2 cup Worcestershire sauce
- 1 lb Baby carrots buy more if you roast is on the larger side
- 1.5 Yellow potatoes
- 1 tbsp Olive oil
- Minced garlic
- 1 White onion
- Tony Chacere's seasoning
- Onion powder
- Coarse black pepper
- Garlic powder
Instructions
- If you want your Roast to be more tender, I would suggest you prep the night before by adding Worcestershire sauce, olive oil, onions, and garlic to pot
- Cut potatoes and add to pot
- Add carrots to pot
- Fill Instant Pot with enough water to cover the roast and majority of the potatoes and carrots
- Turn Instant Pot on and Press "Pressure Cook"
- Set Time for 3 hours (make sure the spout is seat to sealing)
- Voila! You have a delicious meal!
